Sweet potato, quinoa & lentil burgers

I snapped a photo of these sweet potato, quinoa and lentil patties for Instagram (@jadehunter56) and requests started to rolled in for the recipe. As most of my experiments start with ‘what do I have in the fridge that might make up something resembling a meal’ I don’t have an exact recipe, but this is close enough so you can make them at home.

FullSizeRender1 large sweet potato (boiled & mashed)

1 cup cooked lentils

1/2 cup cooked quinoa

Handful of chopped baby spinach

2 eggs

Teaspoon garlic

1/4 cup whole meal breadcrumbs

2 tablespoons psyllium husk

Salt & pepper to taste

Combine all ingredients well in a bowl and seperate into desired sized patties.

Heat a pan with a little oil (I used coconut) and fry for about 5 minutes on each side or until golden brown and cooked through. Keep in mind they’ll still be a little soft because of the sweet potato!
